It’s been a while (SORRY), as soon as I get a chance I’d like to write a post about my absence but for now, let’s get to the FOOD!
I’ve always liked meatballs but for a long time they just never came up. Then one day (off Keto, about 2 months ago) I got the craving for some and ordered a side with the family pizza. OMG they were so good. So soft, so tasty, so yummy. They were phenomenal. After that ordering a side of meatballs with the family pizza became a thing.
Fast forward a couple of weeks (when I finally decided I can’t put off getting back on Keto anymore) and now I want meatballs. What to do? MAKE MEATBALLS!

Ingredients
- 1lb ground beef
- 1/4 cup grated parmesan cheese
- a few shakes of garlic powder
- a few shakes of pepper
- a few shakes of dried parsley
- a pinch of salt
- 1 egg (whipped)

Instructions
Let’s keep it simple, mix all the ingredients with your hands and roll up some meatballs.
I fried them in a bit of oil for maybe 4-5 minutes (on medium high heat), till they were mostly browned (had to flip them and turn them).
Then in the same pan I added my new secret weapon: Rao’s Homemade® Roasted Garlic sauce! So good.
I actually mixed 1/2 cup sauce (4 net carbs) with 1/2 cup water first – then added it to the pan. I then turned it down to low heat and topped it for about 15 minutes.
A minute or 2 before I took them out I topped the meatballs with some shredded mozzarella cheese and let it melt.
I served it with some sauteed butter broccoli and dinner was amazing! AND I have some left over for tomorrow.
Notes
They weren’t as juicy inside as I would’ve like so I’ll do a better job of browning them (to keep the juices in) next time.
Next time, instead of oil I may use butter. OR I may not brown them at all and let them cook in the sauce, so many options!
